Aunt Susy's Tarts

1 pkt. short crust pastry
3 oz. caster sugar
2 oz. ground rice
2 oz. melted butter
1 beaten egg
lemon juice to taste
rasberry jam
Roll out the pastry and cut into 24 circles. Line tart tins with the pastry. In the base of each put a teaspoon of jam.
Mix together the caster sugar and ground rice. Melt the butter and add to the mixture. Add the beaten egg, and lemon juice to taste. Place a teaspoon of the mixture over the jam. Cook for 20 - 25 mins. at 180º.
